Chile Verde
 
 
1 lb    Pork, cubed  
1/4 cup    Onion, chopped  
2 Tbs    Oil  
  Salt and Pepper to taste  
1/2 tsp    Oregano  
1 clove    Garlic, diced  
1 Tbs    Flour  
2 cups    Water  
1-1/4 oz    Green Chilies, diced  
 
1 Fry pork and onion in oil until golden brown. Season with salt, pepper, oregano and garlic.
2 Stir flour into meat. Add water to make a thick gravy. Add diced chilies. Simmer until gravy thickens.
3 Fill tortillas with eggs, bacon, ham sausage, fried potatoes and chili verde.
