In a medium saucepan, cook mushrooms in butter until tender. |

Stir flour, salt and pepper. Stir in milk all at once. Cook and stir over medium heat until thick and bubbly. Cook and stir for one minute more. |

Stir in sour cream or yogurt. Heat through, but do not boil. Serve with beef or poultry. |
