Eclair
 
 
1 cup    Water  
1/2 cups    Butter  
1 cup    Flour  
4   Eggs  
  Powdered sugar or chocolate icing  
 
1 Preheat oven to 400°. Heat water and butter in saucepan. Bring to a boil. Stir in flour. Stir vigorously over low heat for 1 minute or until it forms a ball. Remove from heat.
2 Beat in eggs until smooth. Drop dough 1/4 cup full, 3" apart, onto ungreased baking sheet. Shape to 4-1/2 " long and 1-1/2" wide.
3 Bake 35-40 minutes or until golden. Cool.
4 Cut off tops and pull out any soft dough from the middle. Carefully fill Eclair with vanilla cream, nstant vanilla pudding or eclair filling recipe.
5 Replace tops. Dust with powdered sugar or frost with chocolate icing. Refrigerate until ready to serve.
