Spray a baking sheet liberally with cooking spray. Melt butter; set aside. Combine egg whites and sugar. Beat on medium speed for about 30 seconds. Add flour. Beat until combined. Add butter, milk and almond extract. Beat until combined (30 sec). |

Pour 1 T of batter onto half of the sheet. Spread with the back of a spoon into a thin circle (4" in dia.). Repeat on other half of sheet. |

Bake at 400° for 7-8 minutes until edges turn golden brown. Using a thin metal spatula, lift one cookie off the sheet and turn it over onto a work surface. Working quickly, lay a fortune across the cookie. fold the cookie in half, pinching the top to form a loose semi-circle. Pull the folded ends together while pushing the middle upward to form the traditional fortune cookie shape. Place the cookie on a kitchen towel to cool and shape the second cookie. |

Repeat the process. You may need to respray the sheet between batches. Work quickly! They harden almost immediately! |
