Green Chile Burros
 
 
1 lb    Beef, ground  
6 lg    Flour tortillas  
1 tsp    Salt  
1/2 cup    Water  
3   Green chiles, chopped  
2   Potatoes, grated  
2 tbs    Onions, grated  
1/2 tsp    Cominos(cumin seed)  
 
1 Cook beef, potatoes, chile, and onion slowly. When meat is done, add cominos, salt and water. Add chile. Simmer 10-15 minutes or until thickened.
2 Spread 1/6 of the mixture on each warmed tortilla and roll up. Burros can be made with any kind of filling; taco, eggs with chorizo etc.
