Lime-Cilantro Rice with Pineapple
 
 
1 cup    Long-grain white rice  
2 cups    Water  
2 Tbs    Butter  
1 Lg    Lime juice  
8 oz    can creshed pineapple, drained  
1/2-3/4 cup    Fresh Cilantro, chopped  
  Salt and Pepper to taste  
 
Cook rice according to directions. Add butter and stir to melt. Add the lime juice, pineapple, and cilantro. Stir to combine, and then add salt and pepper to taste.
