Mango-Black Bean Salad
 
 
1   Mango, peeled, pitted and diced  
1/2 cup    Italian dressing  
2 15 oz cans    Black beans, drained, rinsed  
1/2 cup    Red Onion, chopped  
1 sm    Green Pepper, seeded, chopped  
1 sm    Red Pepper, seeded, chopped  
  Salt & Pepper to taste  
 
1 In a food processor or blender, blend 1/4 cup of the mango with the italian dressing until smooth.
2 In a large bowl, combine the remaining mango with the beans, red onions, and peppers. To the bean mixture, add the mango puree.
3 Season to taste with salt and pepper, and chill until ready to serve.
