Orange Roasted Salmon
 
 
2 lg    Oranges  
1   Yellow onion, thinly sliced  
1-1/2 tbs    Olive oil  
5   Salmon fillets  
2 tbs    Lemon garlic seasoning  
1/2 cup    Orange juice  
1-1/2 tbs    Lemon juice  
1 tbs    Honey  
 
1 Preheat oven to 400°. Place slices of 1 orange in a single layer in 9 x 13 glass baking dish. Top with onion slices. Drizzle with olive oil and sprinkle with 1 Tbsp. lemon garlic seasoning. Roast in oven until onion is brown and tender, about 25 minutes.
2 Heat oven to 450°. Push orange and onion slices to the sides of baking dish. Arrange salmon in center of dish and sprinkle with 1 Tbsp. of seasoning. Spoon orange and onion slices on top salmon.
3 Whisk orange juice, lemon juice and honey together in small bowl; pour over salmon. Roast until salmon is opaque in the center, about 12-15 minutes. Transfer salmon to platter; spoon onion along side. Discard roasted orange slices and garnish with additional orange slices.
