Polvorones (Mexican Wedding Cookies)
 
 
1 cup    Butter or Margarine  
1/2 cup    Sifted powdered sugar  
1 tsp    Vanilla  
2 cups    Flour  
1/2 cups    finely chopped pecans  
1/8 tsp    Salt  
 
1 Cream butter, powdered sugar and vanilla. Combine flour, pecans, and salt and stir into butter mixture.
2 Shape dough into 1 inch balls. Place on ungreased cookie sheet. Bake at 350° for 20-25 minutes until lightly brown.
3 Roll warm cookies in powdered sugar and sprinkle with additional chopped pecans if desired.
 
Yield: 36 cookies
