Wash, peel and cube potatoes. Bring a large pot of water to a boil. Add potatoes, and cook for about 10 minutes or until tender. Drain, and set aside. |

Meanwhile, in a large bowl mix remaining ingredients, holding back two eggs for garnish. |

Combine potatoes with dressing while still warm. Place remaining sliced eggs over top, sprinkle with paprika. |
