Sausage & Red Bean Stew
 
 
1 pkg    Honeysuckle White Sweet or hot Italian turkey sausages  
1/2 tsp    Ground cayenne pepper  
1/4   Onion, minced  
2 cans    Kidney beans  
1 can    Pinto beans  
1 can    diced tomatoes(11oz)  
1 can    Minestrone soup(15oz)  
 
1 Cut sausages into 1" slices. Place in a 6qt stockpot. Cook over medium-high heat for 5 minutes, or until brown. Season with cayenne pepper to taste.
2 Reduce heat to low, add onions, sauté 5 minutes more or until cooked through and sausage reaches an internal temperature of 170°.
3 Drain well and add kidney beans, pinto beans, tomatoes and minestrone soup. Stir and simmer approximately 10-15 minutes.
