Stuffed French Toast
 
 
2   Eggs  
1/4 cup    Butter, melted1 1/2  
1 1/2 cup    Milk  
4 tsp    Vanilla  
1/4 cup    Sugar  
2/3 cup    Flour  
1/2 tsp    Salt  
1/2 tsp    Cinnamon  
  Strawberry cream cheese  
2 cups    Frozen berry mix  
1/2 cup    Sugar  
2 Tbs    Cornstarch  
1/2 pint    Heavy whipping cream  
2 Tbs    Sugar  
 
1 Batter: Mix first 8 ingredients in a blender until creamy.
2 Spread strawberry cream cheese between 2 slices of Texas style toast bread. Cut diagonally. Pour a puddle of melted butter, about 1Tablespoon for each triangle of toast., on heated 350° griddle. Dip each triangle in batter and fry on griddle until each side is browned.
3 Berry Compote: In a double broiler on stove set to med-low. Combine berries, sugar and cornstarch. Wisk thoroughly until blended..
4 Fresh Whipped Cream Topping: Mix heavy cream and sugar together with a blender.
5 Ladle berry mix over french toast and top with whipping cream
