Batter: Mix first 8 ingredients in a blender until creamy. |

Spread strawberry cream cheese between 2 slices of Texas style toast bread. Cut diagonally. Pour a puddle of melted butter, about 1Tablespoon for each triangle of toast., on heated 350° griddle.
Dip each triangle in batter and fry on griddle until each side is browned.
