Sweet Potatoes
 
 
8 cups    Sweet potatoes, mashed and drained or 2 lg 40 oz  
1 cup    Butter, 1/2 cup for topping & 1/2 cup for batter  
2   Eggs, beaten  
1/3 cup    Evaporated milk  
1 cup    Sugar  
1/4 tsp    Salt  
1 tsp    Vanilla  
  Nutmeg, cinnamon,  
1 cup    Brown sugar  
1 cup    Pecans, chopped  
1/2 cup    Flour  
 
1 Beat together 1/2 cup butter, eggs, milk, sugar, salt and vanilla, spices. Mix with sweet potatoes. Pour into a greased 9 x 13 cassarole. Blend together flour, brown sugar, 1/2 cup butter, and pecans. Sprinkle over sweet pototoes.
2 Bake at 350° for 35 Minutes.
3 Half recipe for family of four.
