Tropical Chicken Salad
 
 
2 cups    Chicken, cooked, cubed  
1/2 tsp    Curry powder  
1 cup    Mayonnaise  
1 cup    Celery, chopped  
20 oz    Pineapple chunks, drained  
2 lg    Bananas, sliced  
11 oz    Mandarin oranges, drained  
1/2 cup    Coconut, flaked  
3/4 cup    Peanuts or cashews, salted  
 
1 Mix: chicken, curry, mayo, celery and chill 30 minutes. Toss: Pineapple, bananas, oranges, coconut, and peanuts.
2 Add fruit to chicken mixture just before serving.
 
Servings: 6
