Combine orange juice, apple sauce, eggs, and vanilla. In a large bowl, combine flour, sugar, cinnamon, baking powder, salt, and soda; mix well. Add the OJ mixture; stir just until combined. Fold in the zucchini and pecans. |

Pour into two loaf pans coated with Pam. Bake at 350° for 60-65 minutes or until toothpick comes out clean. While still in the pan, spray with butter spray and shake on some cinnamon sugar. |
