Zucchini Bread
 
 
1/2 cup    Orange Juice, plus 2 Tablespoons  
1 cup    Unsweetened applesauce  
3   Eggs, lightly beaten  
2 tsp    Vanilla  
3 cups    Flour  
2 cups    Sugar  
4 1/2 tsp    Cinnamon  
1 1/4 tsp    Baking Powder  
1 tsp    Salt  
1/2 tsp    Baking Soda  
2 cups    Zucchini, shredded  
1 cup    Pecans, chopped (opt)  
 
1 Combine orange juice, apple sauce, eggs, and vanilla. In a large bowl, combine flour, sugar, cinnamon, baking powder, salt, and soda; mix well. Add the OJ mixture; stir just until combined. Fold in the zucchini and pecans.
2 Pour into two loaf pans coated with Pam. Bake at 350° for 60-65 minutes or until toothpick comes out clean. While still in the pan, spray with butter spray and shake on some cinnamon sugar.
