One problem in converting from amounts measured in weight to amounts measured in volume is that one cup of sugar doesn't necessarily weigh the same as one cup of flour. The chart below shows the weights of some common ingredients.
ingredient | weight | volume |
---|---|---|
butter | 1/4 pound | 1/2 cup |
flour (all purpose) | 1 pound | 3 1/2 cups |
flour (cake) | 1 pound | 4 cups |
sugar (granulated) | 1 pound | 2 1/4 to 2 1/2 |
sugar (brown> | 1 pound | 2 1/4 cups (if packed) |
sugar (powdered) | 1 pound | 4 to 4 1/2 cups |
oil | 16 ounces | 2 cups |
corn syrup | 16 ounces | 2 cups |
maple syrup | weight | 1 1/2 cups |
